芝麻油的鉴别方法
1、辨色法:纯香油呈红色或橙红色,机榨香油比小磨香油颜色淡,香油中掺入菜籽油则颜色深黄,掺入棉籽油则颜色深红。
2、水试法:用筷子蘸一滴香油滴到平静的凉水面上,纯香油会呈现出无色透明的薄薄的大油花。掺假香油的油花小而厚,且不易扩散。
经验证此法在区分纯香油与调和香油时,水温有决定性作用,凉水两者都不散,无法区分;温水两者都散开,但油花形状与大小不一致。
3、嗅闻法:小磨香油香味醇厚、浓郁、独特,如掺进了花生油、豆油、精炼油、菜籽油等则不但香味差,而且会有花生、豆腥等其它气味。部分香油是由食用香精勾兑而成,嗅感比较差。
